Winter Market Salad

This healthy, hearty salad uses some of the best fresh vegetables available in winter. It can be a meal on it’s own, or a great side for a warm soup or chili.

  1. 1 cup beets, shredded
  2. 1 cup carrots, shredded
  3. 2 cups kale, finely chopped
  4. ½ cup walnuts or pecans, chopped
  5. 1 cup pea shoots (or other
  6. sprouts such as alfalfa)
  7. 2 tbsp chia seeds
  1. ¼ cup apple cider vinegar
  2. ¼ cup olive oil
  3. 3 tbsp maple syrup
  4. 1-2 tsp sea salt
  1. Using food processor or grater, grate beets and carrots and put in a medium bowl. Chop kale, nuts, and pea shoots and add to the salad bowl along with the chia seeds.
  2. In a separate small bowl, whisk all dressing ingredients together (or shake in a sealed container until well blended) and pour over salad. Toss together lightly, until all ingredients are well coated.
  3. Serve and enjoy!

    This is the most delicious salad! I did not know that you could eat beets raw, but in this salad with the beets shredded they are amazing. I always look forward to making this salad whether it is for guests, Sunday dinner or to treat myself for the coming weeks lunches!
